The gap between the bolt head and the frame is smaller than the thickness of my sockets. Maybe if I took the rear fender off I could get some purchase with needle nose pliers?
Oh, that’s crazy, my idea would have been to take the rear wheel etc. out and then use pliers

Put your bike upside down, attach two nuts to the thread that sticks out. Just on top of eachother so they’re secured at the beginning of the thread. You must ‘lock’ them with eachother (I’m sorry, English isn’t my native language).
Next: use the first nut (the one at the end of the thread) to ‘tighten’ so you can unscrew the bolt.
A few turns will do: you can do the rest by hand.
If you wish to reinstall a stand: use a spacer/washer under the head of the bold so you have enough space to use a ratchet.

Maybe you can use some pliers to start spinning it out from the bottom until you can get a wrench on the head.

A tube wrench or whatever you want to call it? Stick a screwdriver through the side for leverage.
Don’t use pliers: the thread will be damaged which makes removal more difficult.
You use a “hex” socket with a “hex” socket wrench to remove that “hex” bolt
Thin wall Socket ?
