Without knowing what part of the world you’re in, or any specifics when it comes to your preference, it’s difficult to give recommendations. I feel like flat bars are pretty simple, doesn’t need to be expensive or flashy, the most important thing is handlebar width in my opinion.
My honest recommendation would be to go to a bike shop and feel out some bars, you’ll know better what you like that way.

I would make sure you have a good idea of your total width measurement. I’ve never been a fan of super wide risers, but I have a carbon ritchey cut to 23” and i think it’s perfect

They are pretty simple. You’ll mainly have to try some.
I’d get something with at least a little riser, since that means you can tweak the fit by rotating the bars a little. Go a little wider than you think you’ll want and you can always cut them down.
Expect the bike to feel pretty different. The reach will be a lot shorter.
