I know this isnt what you are asking but if you are going flat bar you could replace the brakes with something like the the shimano mt200. Even budget hydraulic brakes will feel better than mechanical ones and dont even cost that much more than a new set of road pull levers for your existing calipers.

I’m going to add myself to the list of people suggesting to pull the plug and go hydro.
But I’m going to buck the trend and say there’s no need to go hydraulic. I’ve got MDC550s on my gravel bike and hydraulics on a cargo bike. The hydraulics are better, but correctly-adjusted 550s are damn near as good. It’s night and day compared to single-piston mechanical discs. Use a 0.15mm feeler gauge to set the pad-rotor clearance with the pad screws. The second time you do it, it’ll take you 90 seconds max.

If your bike are drop bar to start with, most lever with leverage selection will do
such as Avid speed dial; Shimano road flat bar levers (like Claris / Sora / Tiagra)
