I just used my net, it worked well. But some sort way to maybe get crates on the outside or a heavy bag? What's best?
Id like to be able to remove them for more spirited riding.

Ortlieb panniers.
If you want to do something, do it right. Otherwise don’t do it.
Buy 2nd hand Ortieb panniers. They will last 20 years.
Backpack
One or two of those square cat litter containers and some pannier hardware.
Some kitty litter buckets are square and can be easily mounted to the rear rack.
Otherwise, +1 for Ortlieb panniers.
If you want something easily removable any panniers, you don’t need the extremely expensive ones, there is pretty cheap ones on the market

Get a rack and a milk crate. Cut the milk crate in half with a hack saw, mount each half to the rack. You can haul a third bag on the rack between them too. If you do this on front and back you will be able to carry 6 bags easily.
After seeing it done by another user, I bought a couple of the smaller IKEA trash cans and a pannier mount kit from Amazon. All in all, it cost me about 40 bucks. Would recommend 10/10. I can link the parts later, if you’re interested.

Panniers
Panniers would be the easiest solution since you already have a rack. You don’t need to spend a ton on them, there are many good ones out there for around $40, some with three bag systems that let you carry a lot.

When I shop I just put the grocery bags right into the panniers. Get home, pull them out. It takes seconds.
I used to get groceries all the time with a wald front basket it was awesome
You were able to afford that fairly expensive mid drive kit, I’m sure you could afford a couple of decent sized rear panniers, hahah =)
I’ve also used my chariot once when carrying a big wide plate of shawarma order.. Those things have plenty of space for groceries too.
In a backpack or in a milk crate or in a backpack in a milk crate. I’ve worked in grocery stores for years and this is how I take stuff home.
If you have a wagon, ratchet strap and don’t mind looking silly, you could try what I did here. These aren’t groceries, but same concept applies..

Large, waterproof Rock Bros panniers are heavy duty and hold up well. Each can hold a very full grocery bag and then some. Check Amazon for pricing.
Find an empty carton in the store and strap it to the rear rack.
Cloth shopping bags from thrift stores or road booty. Hang them from the handlebars (loop the handles around the bars so they don’t swing as much or hit the front wheel).
