I just topped off my tubeless tire for the first time on my hard tail and noticed it’s making a weird rubbing/grinding noise and I can’t figure out what it is. I have never worked on the bike and have never even tried to spin it this way before, just randomly decided to do so.

It sounds like it’s either your brake pads rubbing on the disk or you’ve got pitting on your hub bearing race causing a grinding noise. If you just removed your wheel and put it back, I’d wager the pads are just off center and rubbing the disc. Watch a YouTube video demonstrating how to recenter a disc in the caliper and see if that solves it.
Sounds like crunchy hub bearings. Take the wheel off and spin it in your hands while you hold the hub end caps. If the hub feels rumbly or chunky, it’s hub bearings.
