1) Early 2000s Lemond Zurich (upgraded). Lightweight Reynolds 853 steel frame made by Trek in the USA. Upgraded with a 10 speed Shimano drive train; Ultegra shifters, rear cogset, and compact front crankset; 105 brakes and derailleurs. Mavic Kyserium wheels. Newish FSA carbon seat post with a San Marco saddle. “Look” style pedals, but could be changed to flat pedals if you like. New shifter and brake cables, chain, and bar tape. The bike is a medium/large (57cm) and would fit a rider 5’10” to 6’1” (I’m 6’1”). Tuned and ready to go.
2) 2010’s Cannondale CAAD8 Road Bike – 56cm – Shimano 105 / FSA Gossamer Crankset

Personally I’d go with the Lemond. But then I like steel bikes, and have sentimental feelings for lemonds.
If they were both $500 or less I’d go for the Lemond. The Caad is a better bike in general. But it’s not just the bar tape. You may need a new drive train considering the condition of the chain and cassette.
Go for then one that is tuned and clean.
Lemond for the cool factor. You’re splitting hairs between these two so pick which one you like on the looks.
Look is a version akin to SPD SL. You’ll need look cleats, SPD SL cleats won’t work. Other than that they’re basically the same and behave the same.
If you don’t buy that lemond let me know where it is because i will.
I’d buy the Lemond because I have a caad10 haha.
But like others said the Lemond looks like it’s been upgraded and better kept over the years. It’s going to be heavier because of the (high quality) steel frame, but will ride great.
The caad8 will be a fun bike too but it’s seen harder miles

Id go for the Lemond if it fits you well. I think the condition of the CAAD with the bar tape and bike computer mount installed wrong just gives me bad vibes. Technically the CAAD is the better frame and the components are newer but its photos do not put it in a good light. 500 is a little high for either. Lemond at $300 ok. Maybe lowball and offer the CAAD $100 due to the condition and extra labor time needed to bring back to life.
Those Lemond 853 bikes are some of the best riding bikes I’ve ever been on in 35 years of riding. I owned a shop and we sold the heck out of those bikes because everyone in the shop loved them so much. Just a really great bike considering the mass production.
