Just replace it. Take the old one to a Bycicle repair shop to get the right size.

Yes, you can replace 1 spoke. A LBS can help identify the right size and get it installed/trued.

Just the spoke, unless you damaged the rim. Measure up one of the other spokes (same side of job) and go buy 2 spokes and 2 nipples. Maybe $10 worth of parts, and about 5 minutes of work. Make sure your wheel is true when you are done.

2-cross pattern, not too difficult to replace a single spoke without ripping the whole wheel apart

Yep, totally possible. Replace the spoke, true the wheel get out there rolling.
Something caused that spoke to break. It may be worth figuring out what. Sometimes it was just a faulty or poorly adjust spoke. It could be a something wrong with the rim, too.

I would just replace it, but take a good look at the rest.

You’ll need to remove the cog to replace spoke. You’ll need a special tool to put back on when you’ve replaced the spoke.

Take it to a bike shop, shouldn’t be too expensive to replace a spoke

My basic rule is if a spike brakes replace it, if another one breaks replace it, if another one breaks it’s time for a rebuild – as long as the rest of the components still look fine.

One is easy enough to replace.
