Hi, I've been rocking my stem like in the first photo for a while now but i wanted to switch to a different spacer situation like in the second photo. I'm kinda skeptical about riding with that much less stem-fork contact. Can someone please tell me if im being paranoid or if im right for not trusting this?

You’d be fine with either!
as long as the top of the fork is at the very minimum in line with the second stem clamp bolt and not below, it’s useable.
First pic is fine. Crank the fucker down and if no wobble your golden.
