I know this is xbiking and anything goes, but kinda still want your opinion.
Considering an Ergotec riser 50 comfort 31.8 handlebar to open up my arms. The stem has got to go. Hated it from the start + it’s rocking sideways.
Would a thick handlebar look weird? The tubing is so elegant on this bike.

I doubt it would, but there are plenty of 25.4/26mm riser bar options out there. Your only option stem wise is to get a quill to ahead adapter and then fit a modern stem or buy a more expensive niche quill stem like Velo Orange makes.
Keeping in mind there are bars with 31.8 clamps that narrow down as you move away from center as well as shims to use on a narrow bar to make it work with a 31.8 clamp I feel you can find something that will work aesthetically.
It’s never stood out to me when the clamp is a 31.8 on any build. They taper off quite quickly to the same size as 25.4/26 stems so the majority of the bars are still the same size.
I think it would look great.
Depends how you feel about having an aliexpress part somewhere as important as the stem but this would do the trick annddd it looks lovely. haven’t tried one but always keeping these in mind for the right build. they come in black or silver
