The post mount on my new bike is very uneven causing the brakes to have a hard time being centered and I’m not sure if facing will completely level out the post mount. I’ve had many carbon bikes and non of them have ever had this issue. Am I overthinking this or is this something I should take up with the manufacturer?

Nope. In my opinion this should have returned to the company right away before being sold.
Was that post over torqued? Looks like a pretty big crack that extends deeper than just the paint, reference image 1,2, and 3. I see the extended metal face past the carbon, which doesn’t look like a lot for the mating part to hold it’self to. Concerned / curious about that crack as you really have a lot of stress in that area when breaking. For a new frame that’s a point of concern, at least for me it would be.
No, it needs to be professionally faced.
Very common. I just had to purchase a $650 tool specifically for this issue. Manufacturers have to have a tolerance…and they typically are not true/ flush
The inner plateau is what you need to look at. People saying it needs faced are looking at the rough carbon which should not be touching your caliper or pm adapter. We can’t see enough to tell whether it’s properly done. You need proper tools to check against post mount specifications.
