They are perfect beginner road bikes, but they wont do gravel. You cannot fit gravel tires to these bikes because of the brake calipers which limit tire size.

I picked up one of those dolce’s for my wife, it was in baaad shape. Only spent $150, but put another $300 into rebuilding it.

for road and light gravel, yes. You will probably be limited to 28mm tires on both bikes because they are older bikes.
Not many knobby gravel tires exist in that size but Panaracer Gravelking SK goes down to 26mm
