Hi all, i’m very new to this. This is a brand new bike with shimano 105’s gs. There is this weird noise after the 3rd time of use on the easier cogs. I can feel the hits in the pedals as well.

New cables stretch over time and over use, so in the first periods you should adjust the rear derailleur accordingly. That sound you hear is most definitely the derailleur trying to change gear.
