I've ordered a shimano 105 R7000 front derailleur online. This little piece of metal dropped out of the package and it looks like it has a small double sided tape on one side. What is this? Is it important? Where does it go?

It’s meant to stick onto the seat tube to protect it. IIRC, there’s an adjustment screw on the derailleur that pushes against that metal pad to align things.
Frame protector/support plate. You would stick it under the pivot point so when it shifts under load and the derailleur flexes, it doesn’t damage your frame.

The new FDs have a further supporting screw pushing against the seat tube.
Unfortunately the seat tube of the frame I pickef is formed in such a way that this screw hangs in the air and I cannot use it.
Note that not all bikes need this plate. Some bikes have a tab on the front derailleur mount that serves the same purpose.

But you asking this question means you haven’t installed an R7000 front derailleur before and haven’t read the installation manual.
These current generation Shimano front derailleurs are designed completely differently than prior generation front derailleurs, so most of the previous knowledge/skill you have goes out the window. You absoultely must watch a full install video to get it right.

Read the instructions
You stick in on your frame where the frame support bolt would make contact with the frame. It prevents any scratching.
