On my old Gazelle V3 i'm currently running a 10spd 50/39/30T 130bcd 12-27. While it works i find myself mostly on 50 or 39 chainring.
So i thought about modifiying to to a 50/39 with a 11-32 casette. Now my question is will my read dereailiour support the 32T cog? I'm unsure which model it is exactly. I would then get a new chain and adjust my 3x front dereailiour for the two chain rings in the front and dismount the 30T chain ring.

As long as you get a 10 Spd cassette it will work.
But if you change the triple to a double upfront, why not keep the 12/27 in the back? You can even go for a 52/39 or 53/39 upfront to get some more power, then you don’t have to change the cassette because I doubt you will run 53/11 often
You will be stuck to the 10spd, unless you swap everything including front/ rear derailleurs and shifters. Your derailleur will not run smoothly with 11 or 12 speed configurations in this current setup
