Anyone have any guesses what we’re supposed to be seeing here?

It only happens when I’m pedaling. Bike shop couldn’t figure it out. It let’s go of my chain so standing on my bike might be a bit unsafe.. It doesn’t always happen, when I pedal hard, it’s less, happens more during a casual ride. Won’t happen when bike is on a stand.
Casette and chain are brand new unless they are bad or somehow loose

Sounds like a freehub body issue maybe? Also move whatever is touching the top of the cassette. Could also be that

Does this only happen in your tallest gear? It kinda looks to me like two possibilities:
Is your chain touching your fender mount bolt?
How old is your rear wheel and what kind of hub is it?

looks like a sticky freehub to me. sometimes this happens when the grease around the pawls is too thick or grit got in. grab a can of wd40 with the long thin nozzle and try to spray it directly into your freehub’s bearings. it might help to take the casette off. just absolutely hose it while your wheel is laying on its side so it can drip in nicely and find its way to the pawls. the wd40 will thin out the grease in the hub
you could also try taking it apart but if you have a modern bike this is a sealed freehub body and that means you can’t.
