Im general the way i restore them is to firstly. Make them usable for daily use.
Second, preserve whats left, i try to make them look good. But still keep the patina in shape. Imo: bikes of these age are allowed to show it. As the use, wear, and damage is part of what makes them old.
And third: i try to get them as orginal as i can. Making expetions only for semi safety, if modern parts are the same or look the same. Or if i simply cannot find or afford them

I have a 1990 Giant Allegre, frame looks very very similar to your Giant. It came with full Suntour GPX (w/white brake hoods). It has the weird long steerer tube with that Giant spacer too; I wonder why they did that. I do think the fork is very attractive for a unicrown.

Does that Dynohub on the old Fongers still work?
I would like to point out that the chain cover (kettingkast) on the brown Intercycle (Fongers) is not attached in the original way, although it doesn’t look all that bad I think finding the original part should not be that hard (if you’re in NL).
on second thoughts, these chain covers can get very brittle so It might be better just to leave it like this.
