Rode the Roubaix and the Domane and felt very comfortable on both. Rode a giant defy and didn’t like it as much. The carbon wheels and di2 are big selling points for the canyon.
I’m kind of in the same boat. I also added the Polygon Stratos to my list. In fact, narrowed it down to the Polygon and Canyon for the ‘bang for the buck’ reasons.

If you want value for the money look at Polygon bikes at Online Bikes

Horrible customer service and non standard sizing(re:not common) parts on the canyon. I would say go with one of the other two. Also check other brands maybe, cannondale and Scott both have endurance bikes and so do brands like Salsa and Lauf.

Why woudnt you got for carbon with electronic shifting. Canyon seems like the way to go. I would also look at second hand options. If you’re set on buying new, go for it.

+1 for looking into polygon for their strattos S7X if you want a road bike. I recently got their Tambora G8X gravel bike (similar spec to the strattos that you would want) and after getting a pro bike fit done, it feels and rides amazingly well. It’s light and fast, and the specs are insane for the price. I got 1×12 sram rival AXS (etap) for $2,699 (I had a $100 coupon). It is an insane value. A similarly spec’d gravel bike from trek or specialized would have ran me over $4,000.
