Looking good, have a good ride! That extra bottle on saddle bag looks good idea, I was thinking about how to carry more water with me. I have similar setup like yours, and no room for 3th water bottle. How stable it is?
Where are you getting parts if something breaks on this rocketship?

I would switch the bottle on the back into some feed bags on the handlebar.
Whats the handlebar bag you are using? I assume the Restrap, but which one?

Bikepacking on an Aeroad is certainly one of the choices of all time.
You might rub through the top coat of paint with the bar bag against parts it contacts, you could look at adding helicopter tape to those areas if you want to ensure the frame continues to look perfect.
Also, how secure is that bottle on the saddle bag? Looks like it could come loose.
