I want to add a powermeter to my new Canyon Aeroad CF SLX7 Di2.
Is the following one compatible with the 7100 groupset:

I am struggeling to find something about the differences between 7000 and 7100 crank.

Yeah it will work with no problem, Iam using this confing on my aeroad. Only diference between R7100 and R7000 is Q-factor (how far apart cranks are) 148mm-R7100 and 146mm-R7000 so you just need to add one 1mm pedal washer under your pedals on R7000 side and you will be absolutely fine.
