Hello, so I currently have 8 speed campy shifters and rear derailleur (front casette and derailleur is also campy) but a 7 speed Shimano rear casette and hub/wheelset for that. I want to replace these latter components with the proper campagnolo components. Any ideas on how to find these components and more importantly determine exactly what I need? Thank you!

The info on the derailleur should tell you what you need. Plug that info into eBay.
Looks like Shimano 8 spd cassettes will shift well with Campy 8 spd mechs. If it sounds weird, I’m running Ultegra 11s 11-30 cassette with my Campag pre-2015 11s group, and that’s not even supposed to work (it does, just fine).
A Campagnolo 8 speed cassette has a different spline pattern to 9 speed onwards.
A 9speed + hub will not take an 8 speed cassette. It’s not a question of needing a spacer. It just won’t fit. So if you do buy a new wheel make sure it’s 8 speed.
(I know this because I had 8 speed and bought a new wheel set for it off eBay that was the later spline pattern. So then I had to buy a new frame to use those wheels on and so another n+1 was born)
