You definitely could but I would opt for a more old school dry bag that is thicker and more waterproof.

Honestly, that looks like too much play. I think it would eventually slide out from all of the vibrations. Maybe you can put the straps under the black vinyl strap attached to the bag?

My partner did this on her gravel bike and it worked like a charm. Not sure if the straps are to close together, but the concept works.
