The Canyon, but mostly because I can’t imagine myself owning a Celeste bike.
Bianchi easy, more standard parts and looks better
I like Canyon’s Bike Garage and don’t know the situation for Bianchi but considering the price, if you like the color, go Bianchi – for 500 Euros can buy handlebar tape(looks like it’s missing that), pedals and a bike computer.
Canyon, probably lighter and more comfort

Canyon-Bikes simply lack a soul. They’re the german saying “Preis-Leistungs-Verhältnis ist gut” when it comes to bike emotions.
from a price point of view and based on the specs i can find here in Switzerland, i’d go for the Bianchi (with 105 Di2!). it currently has a discount of 700 swiss francs which is quite huge and therefore now costs 200 swiss francs less than the Canyon – which comes with mechanical 105.
In this choice i’d definitely go with the Bianchi. Even though i usually chose a Canyon first. But the price makes really a difference here.
