Just got a canyon endurance 7cf, amd we can't install the handlebar, it's too tough to out it through the tube. Then we noticed that the fork and the base of handlebar have a gap. Is this normal? We can't seem to put it together.

It’s a little tough, but with paste and loose bolts should be fine. There definitely shouldn’t be any gaps.

I have the exact same bike and mine definitely did not come with the fork sticking out like that!

Looks fine, you should just be able to push up the fork and attach everything if the stem isn’t on already. More photos would be good to have a look at the too if the steerer and how long it is. In reality its probably best to take it to your local bike shop for assembly and an initial tune up!

Loosen the two horizontal bolts at the top, then the top screw but carefully. Then you should be able to push the fork in.
Then, lighten tighten the top screw. Don’t tighten it too much. Then tighten the two horizontal screws.
When you put the wheel in and can put the bike on the ground, loosen the two horizontal screws again.
Then take a look in your bike garage. There is a video about how to tighten the headset. Do that and this will be fixed.

Get Canyon approve a repair in one of their official service shops, if something got damaged you want them to cover it. I have four Canyons at home, none came like that although the last one did come with a flat tyre (new tube was paid by Canyon)

Very normal. Loosen the cockpit and you will be able to just push the fork up.
