This actually ended up working really well. For sure not going back with this setup.
After much fiddling with the boox palma settings, 3D printing some mounts, connecting it to a bluetooth gps receiver (since it doesn't have a built in gps), it only ended up using 10% of the battery.
It's very easy to see when outside compared to my phone on full brightness, and the e-ink refresh rate is fast.

So does this use full android? Could see some cool use cases for this.
