Second bike. Hover bar is a gimmick. 105 is great.
Lynksey is rim brake and the fork is scuffed to hell? Has it been crashed.

I would buy the first Canyon, but the variety of bike types and sizes makes me think you haven’t really figured out what kind of bike you need, hardcore gravel, disc road and then a 20 Y/o Ti bike with rim brakes. I would not even consider the Ti frame, dated technology on a bike that has seen much better days and the canyon gravel has those goofy bar that never caught on, bike #2 is my choice, just make sure it fits!

Maybe keep looking. I have an older Lynskey with disc brakes and paid about 1,000 five years ago. And I have never owned a Canyon but from reading r:bikewrench, it has lots of problems with replacement parts and the internal routing cables. I have a new All-City steel frame with carbon fork and grx 2×11 that is nice, but out of production. My disc cannondale synapse is also very nice and worth checking out.
