I suspect you can put a hex key (5mm?) in bot sides and turn to get the caps off.

Not sure what you mean.
In the photos you show the flanged ends of the spokes where they go through the hub and the only way to remove these is to cut them off destroying the spoke. You remove the spoke by unscrewing the nipple on the other end of the spoke where it meets the rim. You need a spoke key to do this.
