I measured the inner rim width which 15 hence why I got 16mm rim strips but
it feels like the edges of the srrip might damage the inner tube?

It’s probably okay, but ideally you want the tape to climb up the rim wall about 1 mm on each side. If that’s what you got with 16, I’d probably try 18 or 20 next time.
This isn’t for a tubeless setup, right? Because that would definitely not work.
If not tubeless, looks fine to me. The rim strip is just there to cover the spoke holes and any sharp edges. Looks good on both fronts.
