This is my grandfather’s bike from the 80s to the late 90s he died before I was born and I want to know if it is worth restoring. And if so how do should I approach the restoration
You always could restore it for the nostalgia but I can’t really tell what it is. Forks look similar to Profile or Hutch and the frame looks similar to a Skyway Street Scene but your dropouts are different and I don’t see a gusset at the head tube.

Some bikes have extra support where the top and down tube meet the head tube.

In my opinion! It doesn’t look like much, no known brand or shape. Is it worth the hassle? Depends on your commitment and tracking down fresher parts that will work. Sorry to be a downer.

Idk if it would be worth anything but if you wanted to just for personal reasons then go for it. Might be able to make something cool out of it. It would sure be A LOT of work, and parts. So idk what’s worth it to you or not. I can’t answer that for you.
