I was trying to remove the brakes from this old bike to give them a service and the bolt on one side snapped (very easily). Is there any getting it out and replacing it or am I screwed?

EZ-out?
you can screw the other part too,look for a detail plan about canti or vbrake sockles
Drill a hole through the broken bolt, use and EZ-out bit and you’ll be able to remove it. Hopefully it’s not sized or cross-threaded in there
No just remove the front fork, place it against something sturdy and tap the mount for the bolt out.
Cut or file a slot, for a slotted screwdriver and unscrew it
