I'm going to be attempting a cross country tour so I built up a do it all bombproof bike capable of hauling a lot of gear. It's a stainless steel Otso Warakin. It's built with a lot of the xbiking favorite components. Full build specs below:
60cm Otso Warakin Stainless Steel Frame
Cyber Cycles Crossblade Disc Fork 420mm axle to crown
White Industries 30mm Gravel 2x 172.5mm Crankset with 40/24 chainrings
White Industries 30mm BSA bottom bracket
11-36 XT 10 Speed Cassette
XTR M-970 Long Cage Rear Derailleur
Shimano CX70 Cyclocross Front Derailluer
Dura Ace ST-7900 10 Speed Shifters
Paul Klamper Short Pull Post Mount Mechanical Disc Brakes
Zipp SL70 Ergo 40mm aluminum drop bars
Redshift Pro Suspension Stem 120mm

Front Hub Son Dynamo 28 12mm thru axle connected to a Sinewave Front light / USB charging port and Son rear light
Rear Hub White Industries 142/12mm thru axle 6 bolt HG hub
Laced to HED Road Aluminum hoops (21mm internal) I wanted the gravel 23mm internal hoops but these were on sale for $80 each at the time of purchase.
WTB Venture 50mm tires
Yokozuna 2mm extra wide 160mm Disc Rotors
Tubus Cosmo Stainless Steel Rear Rack
Campagnolo Inline barrel adjusters because they're the best barrel adjusters I've ever used.
Generic chain drop guard for front derailleur.

How do you like the fork? Any twist when braking?
super clean
Nice build, although I’d still go with bar ends for long distance touring.
How do your panniers and the Cosmo get along? I ended up moving my Cosmo to my gravel bike where I use smaller panniers because I wasn’t really happy with how my larger Ortliebs fit on it; I ended up buying a Tubus Logo for the touring bike instead.
I need to research the Campy inline barrel adjusters now. lol
A stainless Warakin frame is on my short list of dumb unnecessary spending priorities.
