This is my setup for a trip around France and Switzerland:
The bike is a Thorn Nomad, with Rohloff and disk brakes,
27.5 wheels, with wide Schwalbe tires, and Son dynamo hub, Tubus rack.
I have a Garmin Edge Explore for navigation,
and my phone of course.
This winter I bought some new goodies:
new toptube bag (Decathlon/Riverside)
new frame bag (AGU Venture Frame Pack)
new Ortlieb panniers (Gravel-pack)
new tent (Naturehike Cloud Up 1 PRO 2025)
new bottle cage holder for 1.5 liter bottle
(Topeak MODULA CAGE XL).
I am really happy with the new top tube bag, which is from Decathlon,
from their Riverside series. I love how it stays upright, and how perfectly it fits.
It was only € 25.–. It is not watertight, but I don't care.
I am not bringing any cooking stuff, because I will
be buying food from supermarkets, and sometimes
eat in restaurants.
Not the lightest setup, but for me it's perfect for
a long distance trip around Europe.

Looks great
Your setup is nearly identical to the one I used to ride all of Route 66! However, I did not have those sweet fenders and wish I did.
