While riding, I was feeling that my pedalling wasn’t smooth and seemed to “catch” on something. When I pedalled again from a stop light, the chain came loose where the chain links are.
Not sure what was the cause. Could it be just poor installation? I’ve ridden 50+ kms since re-installing the quick link after cleaning the chain.

Nope, you can buy links.
A part answer because “it depends”
1. If the chain felt odd, it’s likely the quick link wasn’t locked out. That lengths the chain 1/3 a link and it rides up on cog teeth, then settles. That could lead to it falling apart with a lack of tension.
^ cause – poor install or wear. It doesn’t really matter – no benefit to root cause
2. Its possible the whole chain is worn and at risk of snapping and the quick link was first to fail. If this is true, a spare quick link will get you home but best to replace the chain.
^ you can / should buy a chain wear checker. Eg park tool. At 0.5 or 0.75 wear, replace the chain
Chains are so cheap. Just get a new one.
