Building 2 Bikes (Bamboo Frames) – Need Advice/Thoughts

I'm embarking on an exciting project to build two bamboo bike frames for gravel touring with my wife. This is my first time building a bike from scratch, and I'm looking for some expert advice to make sure I get it right.

I want to be budget-conscious while still finding quality parts. Any tips on how to tell if I'm getting a good deal on components would be super helpful. Specifically, I'm looking for advice on full builds, including wheels, tires (700×50), cranks, and brakes.
