So I have these fixations which I guess are for a front rack.
How else could I use them to attach little bags (like 3L) or water bottles (one fixation I guess wouldn't be enough for stability) ?
It is a carbon fork.

Yeah one bolt for sidemounts won’t really be a good idea. It says for use with this one specific rack might want to take that serious
