This is my winter camping setup for 3 or fewer days in the Colorado Rocky Mountains. On the rack I carry a 4 season bivvy & ground cloth, a 1 liter pot for melting snow, warm clothes, warm gloves and a puffy jacket in the dry bag (strapped on top of that is a folding saw and giant hunting knife for splitting firewood), a ¾ length down filled exped pad in the yellow stuff, and a chair on non drive side.
Frame bag carries food (usually a bag of outdoor boys bread dough, jar of honey butter, sweet potatoes, marshmallows, & freeze dried garbage) stove, small cast iron for bread, mug, long spoon, Sawyer mini water filter, inflatable sit pad, playing cards & tiny cribbage board if traveling in company, telescoping marshmallow skewer, head lamp, power block, toiletries and trowel.
Front roll is held on by a DIY harness made from old tires, voile straps and 3d printed spacers. It holds my sleeping bag in a waterproof stuff, currently the Big Agnes 15° Lost Ranger 3-in-1. On top of that, obscured by my helmet, is a small handlebar bag that straps around the front roll which carries my ride snacks, weed & sunscreen.
I keep water handy in a 40 oz single wall Kleen Kanteen bottle in an insulated Chrome feed bag strapped to my bars.
Bottom of downtube holds an old peanutbutter jar with all my tools, sealant and first aid.
Both pics are from segment 1 of the Colorado Trail in December 2023 and December 2024.

Looks pretty sick! Do you have pics of the bread making while camping?
