My goal is to bikepack from San Francisco to Los Angeles. So, is it possible to load up this bike with camping supplies and go? I'm concerned that the tires and frame are not built to carry a lot of weight.

Front rack, large frame bag, rear rack or saddlebag, maybe a couple handlebar feedbags… yep it’s doable. Might want wider tires for comfort.
You can do anything you put your mind to!
For real though, those wheels look like 36 spokes so should be good there, even if the rims and single walled. I’d get puncture resistant, high wear tires though. That route can have debris on the roads.
That noise aside- this is literally a touring bike lol. It’s what they called bike packing before they called it bike packing.
That’s touring and it depends if you can mount racks. With racks it’s so easy. Without you have to get creative
