I have 25mm tires on this now, how much bigger could I go currently in the front and if I switched to single speed, how much clearance would that get me in the back? Trying to make it as comfortable for NYC riding as possible. Thanks!
Switching to single speed will not give you more clearance, since the limiting factors are usually the space between the chainstays close to the BB and the brakes, neither of which are affected by gears.
It looks like you have a decent amount of room in the front and can go up to at least a 28, likely more.
For the back, we‘d need a photo of the narrowest part as described above.

How many gears a bike has or does not have will not magically make the frame accept wider tyres. The tyre clearance is the tyre clearance no matter whats at the centre of the wheel.
