Do you want to use panniers?
If yes I would go for some pannier bags, a frontloader, toploader, mid loader and maybe fork bags.
But all this depends on how long you want to stay on the road.
Most essential I think is some sort of backloader/pannier bags.
Restrap top tube/frame/saddle, tailfin downtube. Tailfin saddle is popular too if you don’t want a rocket.
