I can’t imagine that bike has much tire clearance at all.

I personally would keep looking for something with more clearance, at least cantilever brakes and at least 28 spoke wheels.
that being said this is an insanely cool road bike project

Will 90% depend on what space you got in the rear and fork to allow for bigger tires.
I don’t know the model but it looks like a “race oriented” road bike, so very unlikely you can get more than 28mm in. So id say no.
Also that saddle angle my dude

Even if not a gravel bike project, that looks a steal for 200 eur. Gorgeous bike

No. Lovely vintage road bike project though.

I had a pair of those Shimano 105 wheels!
They weren’t great… ☹️

Sick bike but will probably have max 30mm tyre clearance

Put new road tires on it and rip it. 80s/90s steel road bikes are top tier fun machines

Throw some tektro r559 brakes on there and some 650b wheels with 42mm tires, and enjoy riding any road you want on some fantastic vintage steel.

No. Or road. Narrow clearances, no disc brakes, downtube shifters suck.

Some people would consider the tire clearance too tight for road, let alone gravel.

Gravel, nope! But a nice vintage bike to cruise around

Very much unsuitable
You want maybe a disc brake hybrid or some obsolete disc brake MTB but you’ll still have some issues with the group set

You’d have to do gravel on 23mm tires probably
