Over 2 years I've readjusted the brakes 3 times, with no issues at all.

I don't feel the desire to need "more stopping power"

Looking to move over 2x via shimano di2 or sram 2x axs, what am loosing by saving some money on additional equipment an build cost?

    Unfortunately, I don’t think there are any current Shimano or SRAM electronic groupsets that have anything but hydraulic brakes. If you want mechanical brakes with electronic shifting, I think Wheeltop is the only one that currently offers that, unless you’re able to find an older SRAM / Shimano electronic group new old stock or second hand. .

    In terms of braking performance, I have JuinTech cable actuated hydraulic brakes on my commuter / gravel bike, and 105 hydraulic brakes on my road bike. The hydros are a bit more powerful, but I don’t think the difference is enormous, especially if you are riding in a flat area (as I am as well).

  2. You can probably find complete rim brake Force or Red Etap groupsets for under $500 (or local equivalent) on marketplace or eBay.

    I think the main benefit of full hydraulic brakes is how much less effort is needed to get full power stopping. Not really an issue on short rides, but a few hours into an intense trail ride the lighter lever pull probably starts to make a difference.

    I have mixed feelings. I like the adjustability and quietness of mechanicals but not the sag and compression-less housing defeats most of the cost benefit. Hydraulics have gotten way better over the last fifteen years. I don’t notice a significant difference in power but modulation.. definitely.

    Firmly in the 2x camp for gravel. 1x is MTB and CX, for me.
