The front brakes started this grinding sound followed a week or so later with the back brake doing the same. When I inspect the brake pads, I am seeing a buildup of aluminium mounds from the wheels. Is replacing the pads the fix or should I be doing something with the wheels as well? Bike is a Giant Cypress.

You picked up grit, likely while riding in the wet. You can try digging the grit chinks out with something pointy, or replace the pads.
Replace the pads. I had this issue with some older pads, it was ripping up the rim. Chucked in new pads. Stopped.
Disclaimer: that my personal experience.
That’s fairly normal. Clean the brake pads regularly and pick out the bigger chunks of aluminum with something pointy.
