I was looking for something to become healthy and thought about a way to stay the course. My solution, bike commute to work but the last time I rode a bike was when I was 5. I'm looking for a simple commuter bike with low maintenance. My budget is $500 but can push it to $800. I don't care about speed. Just something reliable that won't break. I need the bike to handle Chicago weather. Out of FX 1, 2, and 3 which is best is 3 worth the price? I'm buying online. Should I look at other models? If so then which?

If you just want a reliable bike, any of these would be fine. As you move up from fx1 -> fx3, they add things like a lightweight carbon fork and other nicer components, but the fx1 should be good and reliable. In Chicago, there is a Trek Store in Wicker Park, and they have a lot of FX in stock last time I visited.
If this is going to be your commuter bike that you lock outdoors, I would be a little concerned about having a shiny new bike due to theft. There are many used bike stores in Chicago that can sell you reliable older bikes for less money.
In terms of handling the weather, a lot of that will be on how you maintain the bike.
