I have just started a bicycle tour from Cophenhagen to Athens. I don’t have that much prior knowledge of cycling, but have done quite a few other trips and wild camping. My plan is to wild camp and use hostels in the cities. I have drawn a rough plan, but am quite flexible. Do you guys have any tips?

Why not enter the Alps in Switzerland and travel across them west to east? That flat bit in the north of Italy is not a good place to ride a bike
Planning similar and also did a route through balkans 2 years ago. I assume you’re heading the long way round the alps because you’re concerned about climbs? If so consider the Brenner pass or the alpe adria which are reasonably easy. Be very careful when planning coastal Croatia – the traffic can be horrendous especially on D8. Consider the islands which are slightly quieter
Why would you skip Switzerland? It’s RIGHT THERE!
It’s awesome. Bring money.
