
I removed the silver plates ("covers" or whatever they are called) and put grease on the inside of it. Now I saw on YouTube, that the bearing actually comes out as well and I need to put grease on the outside of it, instead of putting in on the inside like I did.
But I noticed that the bearing doesn't come out. Am I misunderstanding something here?

looks like sealed bearings. you can use a sharp pick to remove the covers and regrease it.
Depending on the groupset and pulley wheels, you may get pulley wheels with bushings (cheaper option) or bearings (more expensive).
Bushing is just a piece of metal/plastic that the pulley wheels spins around, and these you can easily take out an regrease.
Bearings (like in the top one on your picture) has a proper bearing inside (with the small ball bearings that make everything spin), where you can take the rubber seal off (the black part) and put new grease inside.
I think you saw the video of the derailleur with the bushings. Mine slx 12 sp is like that. There makes sense to remove the bushings and regrease them. With the sealed bearings I don’t see any point in regreasing the bearings, just clean it, put the grease under the covers and reassemble it.
Most likely you will sell the bike before those bearings will need replacement.
BTW set of jockey wheels with the bearings costs 20 euros.
