First question: what bike are you checking here? That’s the first information we need.
For example: I just got my Grizl. 189 cm, 95,5 cm inseam. As my legs are long compared to my torso, the reach for XL was too long. So I went for L. Canyon suggested XL.
I don’t really trust Canyons size table. But I think I‘d go for XL here. Your Torso seems to be quite long. That minimizes the chance of a too long reach.

Im 1m94 / 87cm, ils great. The saddle is not top high since i have short-ish legs, and with my long-ish torso my posture is not agressive Even for the Grizl

Canyon sizing recommendations are quite large but since you are basically in the direct middle of xl, it is unlikely to be too long.
You could probably also get a large if you wanted to, depending on which bike this is you could probably just fit a longer stem to a large if necessary.
Depends also on your level of core strength and flexibility. The less flexible you are, the smaller you want the frame.

Trust Canyon. I was skeptical (thought I was a large and the chart and Canyon’s recommendation said Medium). Medium works for me!
