Factory grease is fine. The greeny-yellow Shimano grease is lime flavour, as a bonus!

Looks like there’s too much on, so I’d wipe off most of it. The rest will only serve to attract grime and dust.
Only needs a thin film.
No need for anything special here. If it looks like grease and feels like grease its good enough, and in any case surely Shimano chose that spesific grease for a reason.

I think this is a personal preference – it’s good grease, so there’s no real need to wipe it off
I usually do wipe down this neon Shimano stuff and use my own grease, but only because I don’t like how sticky it is and it causes me grief in the shop.
I am also likely to wipe off excess thread locker that’s dried onto factory screws as well so take that into consideration – it’s a personal preference, I just like fresh grease and thread locker that’s dried

It doesn’t matter, for things like this grease is grease.
Leave it. It’s great. That’s exactly what it was intended for.
