Basically the cap (?) on one of my front shocks has come away with the rod (?), I'm not sure of the terminology so have included a picture. I think the make and model is Santour XCM adjustable.
I have since lubed the price that came off and tried pushing it back in / seeing if it would screw in but nada. How do I fix this?

Thats a dust seal/ wiper. Honestly, you probably need to remove the stanchions entirely, buy a new one (might as well get a pair) and replace it.
If any of what I said sounded like Greek to you, take it to a shop.
