I recently purchased a wheelset 2nd hand, the seller said it came from an old specialised. From what I can tell it's a normal hyperglide freehub which I'm going to attach a 7 speed cassete to (with a spacer). I'm replacing an old 6 speed freewheel with a nutted axle.
I can't seem to get the new wheel centered in the dropout, is the dish wrong or maybe it's meant for 11 speed? The old wheel I can center fine.

Hub width on the new wheel is likely wider than the old one and your dropouts
The hub spacing (126mm for 7-speed road hubs and 130mm for 8/9/10/11-speed road hubs) should not impact the dish, as the rim will still be centered relative to the axle. Are you spreading the stays to accommodate the longer axle in your frame? That could explain a mis-alignment of the wheel in the frame. It could also be the case that the frame is slightly out of alignment and the old wheel was just adjusted accordingly.
