I feel like the “packing” part of bikepacking is basically bringing camping gear with you and staying overnight. This overlaps with touring which I think is defined by being a multi-day trip.
If you are only out for a single day, I think it’s neither bikepacking nor touring, but my rules don’t mean anything and you should ride your bike how you like regardless.

Single day is just a ride. Multi day staying in hotels or cabins is touring. Multi day where you carry your own shelter is bikepacking.
That’s my thinking anyway, everyone has their own idea of what falls into each category.

Do you have any issues with your legs rubbing on your Nalgene? Was thinking of mounting that same rack but my pedals were hitting it
