Bikepacking in Andalucia Spain

Hi everyone!! My girlfriend and I are traveling with a campervan through southern Spain and are currently around the base of Sierra Nevada national park, in Andalucia. We’ve brought our racing bikes along with bikepacking gear. We’re still looking into, however, where and when we would like to go bikepacking. Also if we’re going to bring our tents, or if we will sleep in hostels/airbnb’s (since the weather right now isn’t great, especially at night). My question to you is; has anyone gone bikepacking with racing bikes, and where would you recommend going? We aren’t very experienced cyclists yet, so we’d like to do this for +/- 4 days and would want to do around 60-80km a day. Also tips on bikepacking in general are welcome since we’re rookies.
